Becca David 8/31/2024 1:29 PMIt’s hard to believe today is the last day of a challenge. It went really quickly! It’s also the last day of my current apartment complex, where I’ve been for two years, a little bit, bittersweet leaving, however, in the context of food waste challenge. It was sort of satisfying that when I emptied my freezer, I was able to give my neighbor blueberries and a pastry pie crust, knowing that she loves baking and would make good use of it.
and what I brought with me was some pulverized greens to make smoothies, frozen, homemade soup, homemade pasta sauce, chopped onions, and I felt really successful in my personal endeavors in this challenge.
However, the biggest success was looking at the ACW climate action team with seven members coming in at number five in the teams and Margo also coming in in the top five at least at this point in a day bravo to everyone who participated I think we did a great job built Community And had fun engaging with some new folks. Online was a lot of fun!-

I attended a lovely 2 day wedding event where the fruit from the post-ceremony reception was taken to a lakeside celebration the next day to where young and old alike enjoyed freshly made smoothies. A creative and purposeful way to avoid food waste by planning ahead!-

Becca David 8/17/2024 10:40 AMI’m moving soon… and food management has become a new focus. I’m packing up my kitchen and trying to use perishables, pack grains and pasta in an extra layer of airtight protection and NOT eat out…. Oh the challenges!

Becca David 8/12/2024 8:52 AMI’m working on this- my mom hand wrote a bit of my favorite foods for me when I left home or as they said back in her youth, “set up housekeeping”.
It’s harder than I thought it would be because with a few exceptions, I’m a lot like the women in my family- I don’t measure anything! -
Becca David 8/10/2024 2:30 PMI’m finally inventorying the fridge. Ugh. It’s not as bad as I expected but I’ll admit I found a couple not so great surprises! I was thinking that maybe a condiment party is in order!
Get a bunch of hotdogs or whatever it is you like to grill I’m actually not a big hotdog eater but then ask everyone to bring a different condiment close to expiration… along with veggies and fruits… I seem to have a collection of ranch dressing, which I eat on potatoes and vegetables!

A good soup takes time so no pictures yet! There will be onions, peppers, lots of seasoning, spinach, and whatever else I round up!-

Becca David 8/07/2024 7:53 AMYesterday our team met at the magnificent Mojo Coffee Gallery in the California Building in NE Minneapolis for a fun art making activity.
We used a toilet paper tubes, ceramic test tiles, empty cans, bottle caps and more.
We talked about the Foodwaste Ecochallenge, had some hands on tutorials and a lot of laughs!

The more tech-savvy Becca helped another team member get this challenge coming into her phone, we talked about food conservation habits learned from our parents of different backgrounds. Now to actually see if I can make this label thing work in my deliberately small refrigerator! I'm having some success turning over my pantry to being not a collection of wierd food I thought I might try, to being what I actually like to use.

Becca David 8/06/2024 11:39 AMAsparagus!!!! I love asparagus, but have never grown it and now that I’m in an apartment world I have to purchase until I find a Community Garden again… check this out!
To freeze asparagus for later use, select young tender spears, then thoroughly wash and sort them by size. Trim the scales from the stalks and trim spears so they are even lengths. Small spears should be water blanched for 2 minutes, medium spears for 3 minutes, and large spears for 4 minutes. After blanching, cool the spears quickly in cool water, drain them and package the product into a container for freezing—being sure to leave no headspace after the container is sealed.
I also read it as best to lay it out flat and freeze it on parchment paper or a baking tray first before bundling it into a bag or container. I will definitely be trying this if I have any left after cooking; which I usually don’t.
