    This week I wanted to use up some of the produce I had and do some meal prepping since I knew I'd be busy. I rarely cook without a recipe, but I freestyled some black bean and sweet potato enchiladas with veggies from the farmers market, canned beans, and sweet potatoes that have been sitting on my counter for a while. They were surprisingly great, and I froze the leftover filling I had and plan to use it for nachos or tacos in the future.

      I have found some of my best meals are just "thrown together" however, it is then impossible for me to replicate!! I know that is why some never cook without a recipe - way to be brave!!

    I went to my local farmers market last night and had a blast looking at produce and enjoying music. I like to buy baked goods from small businesses and I also love to get fresh veggies like tomatoes and fruits like blueberries because I find they taste much better from a farmers market than store bought.
