    I have to work on this more. It's really hard to break the habit of looking for the most beautiful produce. It's good to realize that some imperfections don't affect the produce at all and to watch for those.

    I usually make extra because I'm thinking about having leftovers but if I already have leftovers of other dishes it's smarter to cook just enough.

    Lemons! I came back from traveling to discover three halves of lemons in the fridge. I can work on squeezing the juice and shaving the peels and keeping them in the freezer until I need them.

    Ok who knows the answer to this: When food scraps are put into the compost does it still produce methane gasses? My dad who used to run landfills says he thinks it's the same amount of methane produced in a landfill as in compost. What do you all think or KNOW?

      Actually, composting and landfills are quite different. In landfills, food scraps decompose without oxygen and produce a lot of methane. In a properly managed compost pile, decomposition is aerobic (with oxygen), so it mostly produces CO₂ and water - very little methane. Methane only forms if the compost gets too wet or compacted. In other words, composting produces much less methane than landfilling.

    A few days ago was very disappointing because my family had to throw out a lot of food. It was left by short term rental guests so it really wasn't our fault but still it's so hard to see so much food get wasted! It made us realize how most people don't care very much about wasting food! So frustrating but we can keep doing our best!
