What have you found out since you started taking an inventory of your fridge before shopping?

I don’t buy as many perishable items as I have in the past. I try to combine more vegetables in salads and sautés than I used to.

Well I made it through the first week with some downs but mostly ups. I also discovered that my food and leftovers tasted better if I stored them in glass containers instead of plastic. So now when I buy something that comes in plastic, I transfer it to a glass container as soon as I get home.

Today I made chicken broth with the all the chicken carcasses and 'spent' vegetables that I keep in the freezer. I had a head of garlic that needed to be used, so I coarsely chopped it and added it to EVOO. I wanted to use my little potatoes, so I made potato salad by adding various produce I had on hand.

This is when I wish I had a personal chef - sounds wonderful. I find meals like this to be so satisfying, good and "useful" !! Way to go :)

    Cooking
We often worry about running out of food so we make too much. What thoughts and feelings have come up when you make just the right amount to eat up all the food?

I strive to make 'just enough' but it's hard for me.

I'm remodeling my kitchen right now. So have a refrig, but no stove or sink. Challenging! But I am noticing how mostly I eat fresh vegs and saute on stovetop, then add other things. Can't do that now. I'm eating a lot of toast in the living room! I invented toast with hummus and kale, after tiring of peanut butter. Pesto and tomatoes. But, overall, this challenge is really making me think about what I waste and how I will kit out my new kitchen better!

That sounds like quite the adventure -- your toast creations could start a whole new food trend! Glad the challenge is sparking ideas for your new kitchen setup.

What did you find you are tossing the most? How can you change your habits to avoid wasting this food?

Fruit! I try to buy less and eat it right away -- but sometimes gets away from me. Trying to notice and be better...

    Storage
Did you find that you were storing things in a spot that wasn't a good fit? Which items have you changed?

I moved where I store fresh veggies that need to be eaten quicker (leafy greens) so that I can see them more easily. I moved veggies that keep longer (beets, peppers, etc) into the crisper drawer where they're not quite as visible.

I use to have a lot of waste with fruits but now I freeze half of my grapes and it makes for a refreshing treat with no more waste.

    • To keep my bananas from going bad I cut them into quarters and froze them until I wanted to use them in a smoothie.
