Esther Jones 8/13/2024 2:39 PMLast night I used bland leftover chicken we didn't like or want to eat again and other ingredients from the pantry and fridge to make a delicious pot of chili! Several ingredients would have gone bad in the fridge in a day or two. Win! -

Esther Jones 8/09/2024 8:45 AMI made a batch of crock pot salsa verde chicken, originally to accompany beans and sauteed veggies. The beans and veggies are gone, but I brought some chicken with me to work for lunch anyway. I'm going to add it to other meal components I already have. -

Esther Jones 8/09/2024 8:43 AMI'm getting more and more comfortable with ingredient swaps. I usually go check the pantry. We wanted fresh corn, but I luckily had canned corn on hand that had been there for a while, so we used it up! -

Esther Jones 8/09/2024 8:37 AMI've started telling myself I can buy one piece of whatever fruit I want and eating that is my reward for grocery shopping responsibly. This week I bought a peach - it was delicious! That helped me not overload the cart with a hungry brain. I should probably also not go grocery shopping after work. -

Esther Jones 8/09/2024 8:35 AMWe had some carrots lying sadly at the bottom of our fridge - good ones from the farmer's market, too. I finally decided we weren't going to eat them, so I scrubbed them, cut off the tops, and stuck them in the freezer with the onion and garlic scraps to make broth in the crockpot when I have time. Next time we buy carrots, I'll look into how to store them better. -

Esther Jones 8/09/2024 8:32 AMWe restarted collecting compost this week! We stopped because we ran out of the green compostable bags, which makes it easier to take out to the bin. I bought some more, and we're wasting fewer leftovers! So far what's in our compost is what we didn't eat from our lunches and veggie tops.-
